First attempt on 5 star dish

One month ago when my parent came to my house for dinner, I cooked this dish “Milk granules fish” (very rush that time, so didn’t manage to take picture) for them, everybody like it, included the girls.

The original recipe included the chili padi, but since the girls will going to eat it too, so I skip the chili padi, but this dish most important is the curry leaf, if cook without the curry leaf…sorry…never try before, so don’t know how it will be without the curry leaf, guess it will not have the Malaysian taste gua.

Anyway, the first time I cook this dish I don’t know how long the evaporated filled milk will take to form into granules, so I stir, and stir, and stir…after 5 minutes the milk just slightly changed colour, but still don’t see the granules, I a bit panic, I thought: “Oh, sh*t, first time my parent come to have dinner and I screw up. How? if it not form to granules what shall I do? make it into butter milk fish? may be…eww…”

But I keep stirring, after 5 more minutes I finally see the milk getting thicker, then another 5 minutes…ta da da…yeah! I did it.

Monday I cook this dish again, but replaced the fish with prawns, and yummy…

This is how I cook it –

Deep fried the prawn first, then set aside.


Then melt 2cm thick of butter, then pour in the evaporated filled milk, add salt.


Stir…stir…stir…after 5 minutes, stir… stir… stir…after 10 minutes.


Keep stirring… after 15 minutes, until see the butter oil all separated from the milk, and the milk begin “dried up” and form into granules, add the curry leaf (the more the merrier ;) ).

Till Now either drain the granules from the oil then add in the prawn stir quickly and serve, or being lazy like me throw the prawns in then drain the oil (the different just more oily only :P ).

Then ta da da…

Next round I’ll use chicken.

But I felt it still lack of something, not quite sure what it was…may be the chili padi…

    怎么不用大虾呢?应该会更有味道,不是吗?如果小辣椒不行,大的应该可以吧!仿佛我鼻子能嗅到似的,那香喷喷的奶油味…

    ET, replace the prawn with chicken and fish, sure good.

    Jason, 大虾 very expensive leh, small wan can eat more mah. some more big wan the meat very hard to control the heat to make it not so dry, and my skill not that good yet, next time.

    mmm… i know i know, to make it more like those served in restaurants, perhaps sprinkle some nestle cereals just before serving? really looks yummy!

    Annie, err…it is “nai lap ha 奶粒虾”, “nai yao ha 奶油虾” is stripy with egg in the milk wan. no time to try that one yet :P.

    Miche, after pour in the milk can add the salt liao, err…I have no idea how much salt I had added, just agak-agak sprikle :P.

    Miche, emm…very buttery smile, a bit like butter prawn “nai yao ha” but this one the taste more “thicker” than “hai yao ha”.
