Eggy Agar-agar

Belles love jelly and agar-agar, I always make some for their treat.
Except the flavored jelly, I like to use agar-agar as the base, and add in some nutritious stuff. So far I have made–
Chrysanthemum tea agar-agar — Nothing fancy, just boil the flower make the tea add some sugar, then bring to boil again add the agar-agar, and set.
Dried longan agar-agar, barley agar-agar, rose tea agar-agar, green tea agar-agar — same as above.
Yesterday I made this egghead eggy agar-agar, just like my mom did before. So long never eat this agar-agar with eggy ribbon inside, my mom and the cook in bakery always made this, especially during festive season.
But one thing I will not have patience to try is the agar-agar in egg shell. I used to have a lot of this agar-agar egg, bakery easy to get the egg shell, what my mom needs was just tell the worker knock a small hole on the egg, drain all the egg left only the shell, clean the shell, boil with hot water, dried it, then fill in the boiled agar-agar.
Very easy to make this eggy agar-agar and very nutritious–
Cook the agar-agar follow the intrustion given on the packaging, add sugar, beat one or two egg, slowly pour into the boiling agar-agar, stir with chopstick while pouring the egg, until all cook off the fire and add colouring.
There is a trick to add nice colouring, never just pour the colouring into the agar-agar, you might have very dark colouring looking agar-agar.
To get the paster colouring in the agar-agar, dip a clean chop stick into the colouring bottle, then take out the chopstick drip one drop colouring and stir, see how is the tone come out, add one more drop if needed. With this method we have more control on the colour.
And there are two type of red in the market, one is red, another is rose. Red colouring you will get something like the red egg colour, Rose will get you the colour like pink, or can even mix it with blue get a nice purple. Red + blue will have purple too, but the tone not as sweet as the pink + blue.
This is my eggy agar-agar.

Now think about it, it will be nice to have the soy bean agar-agar in the egg shell isn’t it?

Yeah, agar agar….I love them! But just wonder, can 1 year old toddler eat agar agar? I plan to make some for my queen too!
I like to make 2 layer agar-agar. Top layer santan and bottom layer normal. Yummy! Sometime my hubby make it during weekend for the kids.

how to make dried longan jelly? need to boil the longan first? or boil everything, including agar-agar, together?
I haven’t made agar- agar for my brat yet.. but once the store is moved.. and everything is settled.. i will try to..

Jefferene, Zara’s Mum—can lar, not too much lor, one or two piece is OK, after all agar-agar made from seaweed, have cooling effect, beast when the kids got ulcer in mouth.

I don’t put a lot sugar wan, the girls well train in their first two year, they start having sweet and chocolate when they reach 2, and they not very fond to sweet stuff.

Sue, Eggy agar-agar taste like the traditional “dan-cha”, don’t know you have this “dan-cha” before or not, hot water mixed with egg and sugar.
